
Ingredients1 large sweet potato, peeled and cut into wedges 2 teaspoons canola oil 1/4 teaspoon salt Pinch of taco seasoning
Directions Preheat oven to 450°F. Boil sweet potato for about 10 minutes. Let cool, then cut in wedges or long strips. Toss sweet potato wedges with oil, salt and pepper. Spread the wedges out on a rimmed baking sheet. Bake until browned and tender, turning once, about 20 minutes total.

I usually make mine with s&p and some rosemary or cajun seasonings. Never thought to try taco seasoning but you can bet I will next time. :) Thanks!
